Grilled Grouper Fillets with Lemon Herb Butter

Ingredients for the Lemon Herb Butter:
1/2 cup unsalted butter, softened
Zest of 1 lemon
2 tablespoons freshly squeezed lemon juice
2 cloves garlic, minced
2 tablespoons finely chopped fresh parsley
1 tablespoon finely chopped fresh basil
Salt and pepper to taste

Ingredients for the Grilled Grouper Fillets:
4 grouper fillets (about 6 ounces each)
Salt and pepper to taste
Olive oil, for brushing
Lemon wedges, for serving
Fresh parsley or basil leaves for garnish (optional)

Steps:
Prepare the Lemon Herb Butter:
-In a small bowl, combine the softened butter, lemon zest, lemon juice, minced garlic, chopped parsley, and chopped basil.
-Season with salt and pepper to taste.
-Mix until well combined. Set aside.


Prepare the Grill:
-Preheat your grill to medium-high heat. Make sure the grill grates are clean and lightly oiled to prevent sticking.

Prepare the Grouper Fillets:
-Pat the grouper fillets dry with paper towels to remove excess moisture.
-Season both sides of the fillets with salt and pepper.

Grill the Grouper Fillets:
-Brush the seasoned grouper fillets lightly with olive oil to prevent sticking.
-Place the fillets directly onto the preheated grill.
-Grill the fillets for about 4-5 minutes per side, or until the fish is opaque and easily flakes with a fork. Cooking time may vary depending on the thickness of the fillets.
-While grilling, you can brush some of the lemon herb butter onto the fillets for added flavor.

Serve:
-Once the grouper fillets are cooked through, transfer them to a serving platter.
-Spoon some of the remaining lemon herb butter over the fillets.
-Garnish with fresh parsley or basil leaves, if desired.
-Serve the grilled grouper fillets immediately with lemon wedges on the side.
